Cake Mix Cookie Recipes

 

Cake mixes came about during the Industrial Revolution.  I don’t know when people started adapting cake mixes to bake cookies, but I have known about it for a few years.  I was told about it by another mother and have done it a couple of times with various flavors of cake mixes.  

 

The first recipe is from a school cookbook that my girls’ school put together a few years ago.  I like this recipe better than the others I have tried.  It tastes more homemade and has some flair.

 

Cake Mix Cookies

 

1 egg, beaten

3 tablespoons milk

2 tablespoons vegetable oil

1 box cake mix (any flavor)

Powdered Sugar for dusting

 

Preheat oven to 350 degrees.  Combine egg, milk and oil.  Add cake mix to liquid and mix well until mix clings together.  Form into 1 ½ inch balls.  Place on cookie sheet and bake 8-10 minutes.  Cool 1 to 2 minutes, then dust with powdered sugar.  Makes approximately 2 dozen cookies.

Cake Mix Cookie Recipe

 

1 box cake mix, any flavor

2 eggs

½ cup vegetable oil

 

Preheat oven to 350 degrees.  In a bowl, add eggs and milk to one box of cake mix and blend.  Add chips, nuts or flavorings if desired.  Drop by teaspoonfuls onto a cookie sheet.  Bake for 10-12 minutes.  Remove cookies when they still look a little bit soft.  Cool on a rack on the cookie sheet for 2 minutes before removing to cool completely on the wire rack.

 

Another idea that I have seen:

 

Cream Cheese Cake Mix Cookies

 

1 box cake mix, any flavor

8 ounces cream cheese, softened

¼ cup butter, softened

1 large egg

1 cup add-ins (nuts, chips, etc.)

Preheat oven to 375 degrees.  Cream together cream cheese and butter.  Add egg and mix until blended.  Stir in cake mix gradually until blended.  Stir in add-ins.  Bake 10 minutes until lightly browned.

 

3-Ingredient Cake Mix Cookies

 

1 box cake mix, any flavor

8 ounces whipped topping

1 egg

 

Preheat oven to 350 degrees.  Mix all ingredients together in a bowl.  Form balls.  Roll in powdered sugar.  Bake on a cookie sheet for 10-12 minutes.  Cool a couple of minutes on cookie sheet before removing to rack to cool completely. 

 

Some great add-ins and combinations that I have tried:  Devil’s Food cake with chocolate chips or peanut butter chips.  Use confetti / Funfetti cake mix for a fun idea for kids.  You can frost them with Funfetti Frosting!
