Oatmeal Cookie Recipes

 

Growing up, my mother did her best to make what she thought were healthy options for us to eat.  This was a cookie recipe that she got from my Dad’s mom and she made it regularly during our childhood as a healthy after school snack.  I know that a lot of Oatmeal cookie recipes call for raisins, but as a child I did not really go for raisins in cookies (or any other cooked food).  I included nutritional information following this recipe to see how much our ideas (or at least my mother’s) have changed over the years.  Wow, aren’t these healthy?  They’re really good, though!

 

Oatmeal Coconut Cookies

 

1 cup brown sugar

1 cup white sugar

1 cup shortening

2 eggs

2 cups all-purpose flour

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon baking powder

2 cups rolled oats

2 cups coconut

1 teaspoons vanilla

 

Preheat oven to 300 degrees.  Cream together sugars and shortening.  Beat in eggs.  Sift flour, salt, baking soda and baking powder and add to creamed mixture.  Add vanilla, oats and coconut.  Make into balls the size of a walnut.  Place on cookie sheets about two inches apart.  Bake 20 to 25 minutes.  If baked until light brown they are chewy, not crunchy.

Healthy Oatmeal Raisin Cookie

 

½ cup whole wheat flour

½ cup all purpose flour

1 teaspoon baking powder

1/3 cup vegetable oil

2/3 cup dark brown sugar

1 egg

½ cup rolled oats

½ cup raisins

 

Preheat oven to 350 degrees.  In a medium bowl, whisk together flours and baking powder.  Set aside.  In a large bowl, whisk together oil and sugar until light.  Add egg and vanilla and whisk until combined.  Add flour mixture and stir until combined.  Mix in oats and raisins.  Form into 1 ½ inch balls and place on baking sheets about 2 inches apart.  Bake for about 15-17 minutes, until lightly browned.
